Björn’s Banana Bread

What is better than a hot banana bread with butter? Have you ever tried it with your favorite cheese on top? It is the perfect mix of sweet and savory. If you have bananas that have become over ripe, they are perfect for this recipe. The preparation only takes about 5 minutes and in about an hour later you have this banana goodness. This recipe will nurture your soul.

YIELD: 1 loaf, around 10-15 slices
Ingredients
  • ½ cup salted butter, softened
  • 1 cup granulated sugar
  • 2 eggs, beaten
  • 3-4 bananas finely mashed
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla extract
How to Make it
  1. Preheat your oven to 350°F
  2. In a large bowl whisk together the butter and sugar
  3. Add the bananas into the bowl, mash them and then add the eggs and vanilla extract, mix well
  4. Sift into the bowl the flour and baking soda
  5. Mix the dry ingredients together with the banana mixture
  6. Pour into a greased loaf pan
  7. Bake at 350°F for 45 - 50 minutes
  8. Cool for 10 - 15 minutes on a cooling/wire rack
